Peanut Butter Cookies

It wasn’t overly busy at work so I had time to think, which is not always a good thing. A couple of weeks ago our dog Kiki passed away and this was the week it really sunk in.

It was the little things that I was missing, her waiting on the couch when I got home from work, her being bossy cause it was 9 PM and she was ready for bed, barking at 4 PM cause it was her dinner time, the little things that made her Kiki.

Needless to say, I was in need of some comfort baking. I made some peanut butter cookies and pretty much ate them all as soon as they were cool enough to eat.

The trick to making these cookies is to whip the butter and peanut butter together until it’s nice and silky smooth. You can use either regular peanut butter or chunky, I used just regular but have used chunky in the past.

I also bought a slip mat and decided to try them out this week instead of parchment paper. Not sure yet how I feel about them I will have to use them a couple more times before I can comment on if I like them or not.

Ingredients

1 cup unsalted butter

1 cup peanut butter (regular or chunky)

1 cup sugar

1 cup packed brown sugar

2 eggs

2 3/4 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1 1/2 teaspoons baking soda

Directions

Preheat the oven to 325 degrees F, and line cookie sheets with parchment paper.

In a medium bowl whisk together flour, baking powder, baking soda, and salt, and set aside.

In a stand mixer cream butter and peanut butter until silky smooth then add both sugars.

Add in eggs one at a time.

With the mixer on low add the flour mixture to the butter mixture.

Roll dough into 1-inch balls and put them on baking sheets. Flatten each ball with a fork, making a crisscross pattern. I dip my fork into a little flour to the cookies don’t stick to the fork.

Bake for about 10 minutes or until the cookies begin to brown.
