Spice Loaf

For some reason, some of my go-to recipes will be loaves or cookies. There is something about them that brings me comfort, and with what is going on in the world right now we need all the comfort that we can get.

This loaf has just the right amount of spice to it, and topped with cream cheese icing it is everything that you will need right now. I came across this recipe by Nicole, at Dough-Eyed, and knew I needed to try this!

Ingredients

1 3/4 cup flour

2 tsp. ground cinnamon

1/2 tsp. ground nutmeg

1/2 tsp. ground ginger

1/4 tsp. ground allspice

1/4 tsp. ground clove

1 tsp. baking powder

1/2 tsp. salt

1/4 cup butter, room temperature

1/4 cup canola oil

3/4 cup sugar

2 eggs

1 tbs. vanilla extract

1/2 cup buttermilk + 2 tbs.

Cream Cheese Icing

4 ounces cream cheese, room temperature

1/4 cup butter, room temperature

1/2 cup icing sugar

1/2 teaspoon vanilla extract

1/2 teaspoon ground cinnamon 

1/3 cup chopped pecan, optional

Ingredients

  • 1 3/4 cups flour

  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger

  • 1/4 cup butter room temperature
  • 1/4 cup canola oil
  • 3/4 cup sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • 1/2 cup buttermilk
  • 2 tbsp buttermilk

Cream Cheese Icing

  • 4 oz cream cheese room temperature
  • 1/4 cup butter room temperature
  • 1/2 cup icing sugar
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/3 cup chopped pecans optional

Instructions

  • Preheat your oven to 350 degrees, line a 9-inch loaf pan with parchment paper and generously grease. Set aside. 
  • In a medium bowl, whisk together the flour, spices, baking powder, and salt. Set aside. 
  • In a large bowl, beat together the butter, oil, and sugar until fluffy. Add in the eggs, one at a time, and the vanilla extract. Add in the dry ingredients alternating with the buttermilk until all ingredients have been added. The batter will be thick and smooth. Pour into your prepared pan, and bake for35-40 minutes, or until a cake tester comes out clean. 

Cream Cheese Icing

  • To make the icing, beat together the cream cheese and butter until fluffy. Add in the powdered sugar, vanilla, and cinnamon and beat until combined. Spread evenly over top of the cooled loaf.
