This Blueberry Loaf is Perfect For Spring

In Calgary, the weather has been unreal. I don’t mean to brag but we have been having temperatures of 10°C and above, which is 50°F for my American friends, and it’s only the beginning of March! We have been able to sit outside and have drinks on the patio in the afternoon already. I honestly don’t remember this happening this early in the year before.

With all the warm weather it feels like spring is here, which means that we should be making all those baked goods we love to eat in Spring. Like anything with citrus (which I just went through a lemon and lime phase), or all the berries that remind you of the warmer temps.

I have two all-time favourite berries, blueberries and blackberries! Even in the winter months, we tend to have a stockpile of these berries in the freezer. I will take a bowl full and eat them like they are candy instead of eating chips or popcorn.

This week I have deiced to use up some of the blueberries from the freezer and make this loaf. If you don’t want to make the loaf, you can put the batter in muffin pans instead, you will just have to modify the baking time a little.

You can use either frozen or fresh, whichever you have on hand, if you are using frozen don’t worry about thawing them first, just put them in as-is. A tip for baking with berries, toss them in a little bit of flour first (I used about 2 tbsps for these berries), this way they won’t sink to the bottom of the batter.

INGREDIENTS

1 1/2 cups flour

3/4 cup white sugar

1/2 teaspoon salt

2 teaspoons baking powder

1/3 cup vegetable oil

1 egg

1/3 cup milk

1 1/2 cups fresh or frozen blueberries

DIRECTIONS

Preheat the oven to 350°F. Grease loaf pan and line with parchment paper.

Combine flour, sugar, salt, and baking powder in the bowl of a stand mixer.

Place vegetable oil into a 1 cup measuring cup; add the egg and add enough milk to reach the 1-cup mark. Mix this with the flour mixture.

Fold in blueberries.

Pour batter into loaf pan.

Bake for 30 to 35 minutes in the preheated oven, or until a toothpick comes out clean.
