You’re Going to Want to Try These Cranberry White Chocolate Cookies.

With the Holiday over I’m sure you thought that some healthy recipes would be coming up. Well sorry to disappoint. To be honest, I don’t have a lot of healthy recipes, and I don’t think that is why people are here. To be fair there is a little bit of oatmeal in this cookie so it is somewhat healthy.

This recipe came up as a test and trial for a different post (about how to make your own cookie recipe) that will be coming later on, but I thought it was a good one and I think people will like it.

I’m not sure if many of you know but I’m not a huge raisin fan, so I try to use anything but raisins in my cookies. I will go out of my way not to use them because I dislike them so much. I will go buy dried apricots and cut them up before I use them that is how much I dislike them. I digress, if you do like raisins you can substitute them in this recipe and I’m sure they would be great.

INGREDIENTS

2 cups flour

1 teaspoon baking soda

1/2 teaspoon of salt

1 cup butter

1 cup packed brown sugar

1 cup white sugar

2 eggs

2 teaspoons of vanilla

1 cup white chocolate chips

1 cup dried cranberries

1 cup oatmeal

DIRECTIONS

Preheat the oven to 325 degrees F and line baking sheets with parchment paper.

Mix together flour, baking soda, and salt and set aside.

Whip butter for one minute on high, then add both sugars. mix for another 5 minutes on med-high until it becomes a pale yellow. 

Add the eggs in, one at a time once they are mixed in completely, then add in the vanilla. Scrape down the sides and the bottom of the bowl. Beat until this is well combined, 2-3 more minutes.

Slowly add the flour mixture.

Once that is combined add the oatmeal, cranberries, and white chocolate chips.

Scoop the batter and bake for about 10 minutes. When I bake my cookies I move the racks to the top half of the oven so they bake slower.
