Lemon Loaf
I go through phases where all I want to do is bake with lemons, well that time is now! It seems to always hit at the beginning of summer every year. I tend to make so many different lemon options (muffins, loaves, cupcakes) that by mid-July I am so sick of lemons and don’t make anything with them until the following summer. I find you get a better flavour with fresh lemon juice than lemon extract but if that’s all you have then it will be fine. If you do have fresh lemon juice, mix the zest in with the sugar and it will make for a more flavorful taste…
