Country Harvest Honey Bread

Ingredients

  • 3 cups warm water
  • 4 1/2 tsp active dry yeast or 2 of the .25 oz packages
  • 1/3 cup honey
  • 2 cups all-purpose flour
  • 5 1/2 cups whole wheat flour
  • 1/4 cup flax seed
  • 2 tbsp sesame seeds
  • 1 tbsp poppy seeds
  • 1 tsp salt
  • 3 tbsp butter melted
  • 1/3 cup honey (yes more honey)
  • 2 tbsp butter

Instructions

  • In the bowl of the stand mixer fitted with the dough hook, mix warm water, yeast, and 1/3 cup honey. Add 2 cups all-purpose flour and 3 cups of whole wheat flour, stir to combine.
  • Cover with a towel and let set for30 minutes, until it’s big and bubbly, almost double in size.
  • Mix in 3 tablespoons melted butter,1/3 cup honey, and salt.
  • Add the flax, sesame, & poppyseeds
  • Stir in 1 cup whole wheat flour.
  • Flour a flat surface with 1.5 to 2cups of whole wheat flour and knead until not real sticky – the dough should just pull away from the counter, but still sticky to touch.
  • Place in a greased bowl, turning once to coat the surface of the dough. Cover with a dishtowel. Let rise in a warm place until doubled, about 30 min.
  • Punch down, and divide into 3loaves. Place in greased loaf pans and rise until dough has topped the pans, about 30 min.
  • Bake at 350° F for 20 to 30 minutes; to tell if they're done knock on them and if they sound hollow they are finished. Lightly brush the tops of loaves with 2 tablespoons melted butter when done to prevent the crust from getting hard.
