This week seemed to be a struggle for me. I felt like I was always running late, even though I wasn’t, and I was having terrible sleep. Kiki seemed to need to go outside every 2 hours, which was awesome. Needless to say, I was not eating breakfast due to the fact that I felt like I was always running behind. I don’t make hummingbird loaves or cakes very often, but every time I do I enjoy it! For some reason, I always think it can only be made for special occasions. Well, the special occasion is that the cold snap is over! Calgary had some pretty brutal temperatures (-35C), thankfully that has come to an end so I thought we should celebrate with a Hummingbird Loaf! The best part about this loaf, besides being incredibly moist, is the cream cheese icing with a touch of cinnamon on top! This makes it even more special. This recipe is one of Kevin’s favorites, he loves everything in it! He hates waiting for them to cool and sometimes starts to eat them out of the pan with a spoon. There are a couple of ways you can make this, either you can layer the ingredients or mix them together and place them on the base of graham crumbs, I prefer to mix them together but either way is totally fine. This week I made some cinnamon rolls, which are delicious, but they took a very long time to make. The recipe called for quick rising yeast and all I had was regular yeast and so it took about 2 hours longer than it should have. I started making these at 10 AM and I wasn’t finished until 2 PM, so learn from my mistake and use fast-acting yeast, it will save you loads of time.
