Blueberry Loaf

Ingredients

  • 1 1/2 cups flour
  • 3/4 cup white sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 1/2 cup fresh or frozen blueberries

Instructions

  • Preheat oven to 350°F. Grease loaf pan and line with parchment paper.
  • Combine flour, sugar, salt, and baking powder in the bowl of a stand mixer.
  • Place vegetable oil into a 1 cup measuring cup; add the egg and add enough milk to reach the 1-cup mark. Mix this with the flour mixture.
  • Fold in blueberries.
  • Pour batter into loaf pan.
  • Bake for 30 to 35 minutes in the preheated oven, or until a toothpick comes out clean.
