Blueberry Scones

Ingredients

  • 2 3/4 cups flour
  • 1/2 cup sugar
  • 3/4 tsp salt
  • 1 tbsp baking powder
  • 1/2 cup butter cold
  • 1 cup blueberries
  • 1/2 cup white chocolate chips optional
  • 2 eggs
  • 2 tsp vanilla
  • 1/2 cup milk

Instructions

  • Whisk together flour, sugar, salt, & baking powder in a large bowl.
  • Cut in the butter using a pastry blender or fork.
  • Add the berries and white chocolate chips and gently stir with a spoon.
  • In asmall bowl whisk together the eggs, vanilla, & milk.
  • Add the wet ingredients to the dry ingredients and use a spoon to combine.
  • Use your hands to complete the mixing process.
  • With lightly floured hands, press the dough into a ball.
  • On a lightly floured surface, knead gently 10 times.
  • Pat out the dough into a 3/4-inch thick round.
  • Using a 2-1/2-inch floured cutter, cut out rounds, I use a small round cookie cutter.
  • Place on an un-greased baking sheet.
  • Bake in a 400 degree F oven for 10 to 13 minutes or until golden.
