It hasn’t been that long that have been making scones. To be honest I was terrified to make them. I always thought they would be a lot of work and that they wouldn’t turn out. To my surprise, they are one of the easiest things I have ever made!
I love making scones and then having them for breakfast for the next couple of days or taking them to work for snacks to have to either get me through to lunch or in the afternoon when I’m starving.
In this recipe, you could substitute the blueberries with any type of berry you would like and they would turn out great! If you are using frozen berries I would thaw them out and drain the excess water from them otherwise they will make the dough very sticky and you would need to add more flour.
INGREDIENTS
2 3/4 cups flour
1/2 cup sugar
3/4 tsp salt
1 tbsp baking powder
1/2 cup butter (cold)
1 cup of blueberries
1/2 cup white chocolate chips (optional)
2 large eggs
2 tsp vanilla
1/2 cup milk
DIRECTIONS
Whisk together flour, sugar, salt, & baking powder in a large bowl.
Cut in the butter using a pastry blender or fork.
Add the berries and white chocolate chips and gently stir with a spoon.
In a small bowl whisk together the eggs, vanilla, & milk.
Add the wet ingredients to the dry ingredients and use a spoon to combine.
Use your hands to complete the mixing process.
With lightly floured hands, press the dough into a ball.
On a lightly floured surface, knead gently 10 times.
Pat out the dough into a 3/4-inch thick round.
Using a 2-1/2-inch floured cutter, and cut-out rounds, I use a small round cookie cutter.
Place on an un-greased baking sheet.
Bake in a 400-degree F oven for 10 to 13 minutes or until golden.
Blueberry Scones
