Preheat the oven to 325°F. Line cookie sheets with parchment paper and set them aside.
In a bowl, whisk the flour, baking, soda, and salt together. Set aside.
In a separate large bowl, beat the softened butter and the sugars together until combined, about 5 minutes. Add in the vanilla extract and then the eggs one at a time, making sure to mix well after each addition.
Stir in peanuts, chocolate chips, butterscotch, raisins, coconut flakes, and any other ingredients you think would be great to add in! If you're using a stand mixer, you may have to fold everything together a few times to make sure the nuts and chocolate are evenly distributed throughout the batter.
Scoop cookies onto the prepared cookie sheets.
Bake for 10-15 minutes or until the edges of the cookies are golden brown. Let the cookies cool for about 10 minutes until they have stiffened and can be handled without breaking. Transfer to a cooling rack and let cool completely.
