Easy and Delicious Kitchen Sink Cookies.
This weekend it has been hot here in Southern Alberta, and being fair-skinned I need to either wear a ton of sunscreen, stay in the shade, or in the house. I opted to stay in the house on Saturday and do something productive like clean out my pantry.
I’m sure I”m not the only one that has 1/4 bags of peanuts, shredded coconut, raisins, and a hodgepodge of other items. I thought I would make these delicious Kitchen Sink Cookies to use up the leftover bags of items to help with the cleanup.
This recipe is pretty forgiving, you can substitute any of the ingredients for whatever you have on hand. If you don’t have raisins but you have dried cranberries swap them out! If you don’t have peanuts but you have pretzels swap them out! I was literally picking out ingredients that I had very little amounts of just to get rid of them.

Ingredients
2 1/4 cup all-purpose flour
1 tsp baking soda
1 tsp salt
1 cup butter, room temperature
3/4 cup sugar
3/4 cup brown sugar
1 1/2 tsp vanilla extract
2 eggs
1 cup chopped peanuts
1 1/2 cup semi-sweet chocolate chips
1/2 cup raisins
1/2 cup butterscotch chips
3/4 cup shredded coconut
Directions
Preheat the oven to 325°F. Line cookie sheets with parchment paper and set them aside.
In a bowl, whisk the flour, baking, soda, and salt together. Set aside.
In a separate large bowl, beat the softened butter and the sugars together until combined, about 5 minutes. Add in the vanilla extract and then the eggs one at a time, making sure to mix well after each addition.
Stir in peanuts, chocolate chips, butterscotch, raisins, coconut flakes, and any other ingredients you think would be great to add in! If you’re using a stand mixer, you may have to fold everything together a few times to make sure the nuts and chocolate are evenly distributed throughout the batter.
Scoop cookies onto the prepared cookie sheets.
Bake for 10-15 minutes or until the edges of the cookies are golden brown. Let the cookies cool for about 10 minutes until they have stiffened and can be handled without breaking. Transfer to a cooling rack and let cool completely.
