Oatmeal Raisin Cookies

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup butter
  • 1 cup sugar
  • 1 cup brown sugar firmly packed
  • 2 eggs
  • 2 tsp vanilla extract
  • 3 cups oats
  • 1 1/2 cups raisins

Instructions

  • Preheat the oven to 325F. Line cookie sheets with parchment paper.
  • Whisk dry flour, baking soda, baking powder and salt together and set aside.
  • In a large bowl using a stand mixer beat together the butter and white sugar until completely smooth and creamy, about 3 minutes. Then add the brown sugar, once it is combined add the eggs one at a time and then the vanilla.
  • Slowly add the flour mixture into the butter and sugar mixture, until no flour is visible.
  • Add the oats and raisins, and stir to incorporate, over mixing will make the cookies hard so just mix until they are incorporated.
  • Scoop cookies on to cookie sheet and bake for 8-10 minutes until golden.
  • Remove from oven, let cool on cookie sheet for about 2 minutes before moving to a wire rack.
