Oatmeal Raisin Cookies
Oatmeal raisin cookies if not made right are like little bricks, you almost chip a tooth on them. These ones are so soft and chewy that you will want to make more of them!
Typically I don’t really like raisins, I’m not sure why but I have never enjoyed them. These cookies though have changed my mind. I can sit and eat six of these cookies and not feel bad about it.

INGREDIENTS
2 cups all-purpose flour
1 teaspoon baking soda
1teaspoon baking powder
1/4 teaspoon salt
1 cup butter
1 cup sugar
1 cup brown sugar firmly packed
2 large eggs
2 teaspoons vanilla
3 cups oats
1 1/2 cup raisins
DIRECTIONS
Preheat the oven to 325F. Line cookie sheets with parchment paper.
Whisk dry flour, baking soda, baking powder and salt together and set aside.
In a large bowl using a stand mixer beat together the butter and white sugar until completely smooth and creamy, about 3 minutes. Then add the brown sugar, once it is combined add the eggs one at a time and then the vanilla.
Slowly add the flour mixture into the butter and sugar mixture, until no flour is visible.
Add the oats and raisins, and stir to incorporate, over mixing will make the cookies hard so just mix until they are incorporated.
Scoop cookies on to cookie sheet and bake for 8-10 minutes until golden.
Remove from oven, let cool on cookie sheet for about 2 minutes before moving to a wire rack.
