These cookies I only make for special occasions, they are such decadent cookies that should only be enjoyed when you are celebrating something or feeling sorry for yourself. I was cleaning out my freezer the other day and came across some frozen raspberries and thought I should use them before they got freezer burnt or I forget about them again for another month, or longer. I have said this before I love pistachios! They are my all-time favourite nut! The only thing I don’t like about them is peeling them. I know you can buy peel pistachios, but they are way more expensive and I would more than likely eat more of them if I didn’t have to work for them. It has been almost a month since the mall has been closed and I have not been able to eat a soft pretzel! I am surprised by how much I miss them! The soft buttery deliciousness is covered in salt! What a difference a day makes. |Yesterday it was snowing here and today it’s sunny and plus 10 degrees Celsius. I was feeling a little tropical with the warmer weather so I thought I would make something with coconut in it!
