    Double Chocolate Chip Cookies

    June 16, 2020 /

These cookies I only make for special occasions, they are such decadent cookies that should only be enjoyed when you are celebrating something or feeling sorry for yourself. I have enjoyed these cookies with friends and alone in bed having a pity party for one. I thought these would be a great cookie to make for Father’s Day. My dad has a wicked sweet tooth (which is clearly where I got mine from) and he would love these cookies. When my parents come down in a couple of weeks I will have to make these for him. I hope you enjoy these cookies whether it’s with friends or in bed…

    Raspberry Chocolate Chip Loaf

    June 7, 2020 /

I was cleaning out my freezer the other day and came across some frozen raspberries and thought I should use them before they got freezer burnt or I forget about them again for another month, or longer. I wanted to try something different than the usual muffins or pie. I was looking online for a couple of days to find something to try and came across this Raspberry Chocolate Chip Loaf recipe and thought I would give it a try. I made a few minor changes to this recipe, I didn’t have yogurt and almond extract so I used sour cream and vanilla extract, but otherwise, I stayed pretty true…

    Apricot Pistachio Oatmeal Cookies

    May 31, 2020 /

I have said this before I love pistachios! They are my all-time favourite nut! The only thing I don’t like about them is peeling them. I know you can buy peel pistachios, but they are way more expensive and I would more than likely eat more of them if I didn’t have to work for them. A few weeks ago I came across this recipe from Daisy’s World and knew I had to try it! I didn’t really modify this recipe at all, the only thing I did was flatten the cookies after scooping them. If you don’t flatten them they will not spread out or bake properly. I hope…

    Earl Grey Scones

    May 22, 2020 /

Baking with tea has been something I have really been enjoying this year. There is something about being able to modify the taste by either soaking tea bags in the milk you will be using or using the actual tea leaves in the product you are baking. It is a great way to add some subtle flavour to a delicious treat or put a new twist on an old favourite. When I bake with earl grey tea I always think of my auntie Marie, so I thought since I was going back into the off now I would surprise her with some of these. I left home a little earlier…

    May 17, 2020 /

What a crazy week this was! With the mall opening back up on Thursday this week was super busy and it seemed to fly by. Thankfully this weekend is a long weekend and no one is happier about it than me! I wanted to make something quick and easy this weekend so I could get out and enjoy the sun. I decided to make these Oatmeal Peanut Butter Chocolate Chip Cookies by Two Sugar Bugs. This recipe is very easy and the cookies were delicious! Yes, we ate them all! I hope you enjoy this recipe as much as I did, and that you have a wonderful long weekend! INGREDIENTS…

    Hummingbird Cake

    May 10, 2020 /

For some reason lately, I have been obsessed with Hummingbird Cake. I’m not sure if it is the banana and pineapple combination or what the deal is but I seem to want to make this for every occasion. Last weekend we went up and saw my parents, to check in on them and make sure they were doing well. With Mother’s Day being the following weekend and it being their 51st Wedding Anniversary we thought we should bring something up to celebrate with them. Of course, I made a Hummingbird Cake to take up! The original recipe is from Gonna Want Seconds blog, I made just a couple of minor…

    Honey Pistachio Scones

    May 3, 2020 /

I love pistachios! This is one of my all-time favourite nuts. I love having them as snacks but the I love pistachios! This is one of my all-time favourite nuts. I love having them as snacks but a handful while watching TV or reading a book. We always have a bag or two on hand for my snacking pleasure I have been wanting to bake something with them for a while now, so I was looking for a recipe that was not cookies. After looking for over two weeks I can across a Honey Pistachio Scone recipe on My Baking Bliss I made just a couple of edits and I…

    Soft Pretzels

    April 26, 2020 /

It has been almost a month since the mall has been closed and I have not been able to eat a soft pretzel! I am surprised by how much I miss them! The soft buttery deliciousness is covered in salt! My mouth is watering just thinking about it. Since I was missing my salty carb snacks I figured I would try and make some to fill the void. This recipe is pretty close to Mr. Pretzel snacks I love and miss so much. The only thing I found surprising was how difficult it was to twist the pretzels. They make it look so easy! For those of you that are…

    Oatmeal Coconut Cookies

    April 19, 2020 /

What a difference a day makes. |Yesterday it was snowing here and today it’s sunny and plus 10 degrees Celsius. I was feeling a little tropical with the warmer weather so I thought I would make something with coconut in it! Kevin was asking for cookies and I had seen this recipe for Oatmeal Coconut cookies, with a couple of adjustments I think they turned out really good. For these cookies, you need to put the raw batter in the fridge for a bit so it bakes a little slower and the cookies don’t spread as much. I use this trick if I find I have overwhipped my cookies a…
