Oatmeal Peanut Butter Chocolate Chip Cookies

What a crazy week this was! With the mall opening back up on Thursday this week was super busy and it seemed to fly by. Thankfully this weekend is a long weekend and no one is happier about it than me!

I wanted to make something quick and easy this weekend so I could get out and enjoy the sun. I decided to make these Oatmeal Peanut Butter Chocolate Chip Cookies by Two Sugar Bugs.

This recipe is very easy and the cookies were delicious! Yes, we ate them all!

INGREDIENTS

3/4 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup butter room temperature

1/2 cup brown sugar firmly packed

1/2 cup sugar

1/2 cup chunky peanut butter

1/2 teaspoon vanilla extract

1 large egg

2 cups of rolled oats

1 cup of chocolate chips

DIRECTIONS

In a medium-sized bowl, whisk flour, baking powder, baking soda, and salt. Set aside.

Cream butter and both sugars on medium-high with a stand mixer fitted with the paddle attachment, or a hand mixer, until combined.

Add peanut butter and continue until light and fluffy. Approximately 3-5 minutes.

Add vanilla and the egg. Mix until well combined.

With the mixer on low, add the flour mixture and mix until just combined.

Fold in oats and chocolate chips.

Preheat the oven to 325°F.

Prepare baking sheets with parchment paper

Using a cookie scoop, place cookie dough on a prepared baking sheet, spacing about 2 inches apart.

Bake 10-12 minutes until edges are lightly browned.

Allow to cool on the pan for 5 minutes and then transfer to a cooling rack to cool completely.
