White Chocolate Cranberry Cookies

Ingredients

  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup butter
  • 1 cup brown sugar lightly packed
  • 1 cup white sugar
  • 2 eggs room temperature
  • 2 tsp vanilla
  • 1 cup white chocolate chips
  • 1 cup dried cranberries
  • 1 cup oatmeal

Instructions

  • Preheat oven to 325 degrees F and line baking sheets with parchment paper.
  • Mix together flour, baking soda, and salt and set aside.
  • Whip butter for one minute on high, then add both sugars. mix for another 5 minutes on med-high until it becomes a pale yellow. 
  • Add the eggs in, one at a time one they are mixed in completely, then add in the vanilla. Scrape down the sides and the bottom of the bowl. Beat until this is well combined, 2-3 more minutes.
  • Slowly add the flour mixture.
  • Once that is combined add the oatmeal, cranberries and white chocolate chips.
  • Scoop the batter and bake for about 10 minutes.
