There’s a strange gap in the produce calendar every autumn. The tomatoes are gone, the peaches are gone, but it’s not quite soup season yet, and green beans are still hanging around, refusing to leave the party. This salad is what I make in that gap. It takes a vegetable everyone associates with summer potlucks and dresses it up in every flavor fall actually craves: earthy radicchio, sharp red onion, creamy goat cheese, toasted nuts, and a creamy poppyseed dressing that tastes like it belongs next to a stack of sweaters and a candle that smells like clove.
It’s also, conveniently, one of the fastest sides you’ll make all season. Fifteen minutes of prep, two minutes on the stove, and you’ve got a platter that looks like it took a lot more effort than it did.
Why This One Works for Fall
Green beans are a low-key year-round vegetable, but the way this salad treats them is pure autumn. Radicchio brings that slightly bitter, wine-red note that pairs so well with cooler weather, and it visually turns a summery green vegetable into something that looks right at home on a harvest table. The goat cheese adds richness, the walnuts and almonds add crunch and a little bit of that toasty, nutty flavor that always feels seasonal, and the tarragon keeps things from getting too heavy or predictable. Drizzle the whole thing with a creamy poppyseed dressing, and you’ve got something that could sit next to a roast chicken on a Sunday or a sheet pan of squash on a random Tuesday.
Also: It’s a Genuinely Fast Weeknight Side
If Fall is more of a mood for you than a meal plan, here’s the practical case: this salad comes together in under 20 minutes, and most of that is hands-off boiling water time. Blanch, toss, arrange, done. You can blanch the beans up to two days ahead, which means on an actual weeknight, all you’re doing is assembling a bowl of pre-prepped ingredients. That’s a real side dish on a 20-minute dinner timeline, not an “if I had more time” aspiration.

Make It Yours
This is also one of those salads that’s hard to mess up by swapping things around. No tarragon on hand? Parsley or chives will do. Not a goat cheese person? Feta holds up just as well. The real point of the dish isn’t any single ingredient; it’s that mix of something crisp, something creamy, something crunchy, and a dressing tying it all together. Once you’ve got that formula down, it’s less a recipe than a template for whatever’s good at the market that week.
