We have been having some crazy weather here in Southern Alberta (hot one day, then raining and snowing the next), and I a ready for the summer heat to arrive and stay. Lemon Poppyseed Loaf
When I was on my lemon kick a couple of weeks ago I made this lemon poppyseed loaf. I always try to mix the sugar and lemon zest together to give it a more lemon flavour and this time it didn’t disappoint! If you’re not a fan of lemons you can use any citrus fruit and it would be amazing! This loaf is packed with lemon flavour and because of the yogurt, it is unbelievably moist. I go through phases where all I want to do is bake with lemons, well that time is now! It seems to always hit at the beginning of summer every year. I tend to make so many different lemon options (muffins, loaves, cupcakes) that by mid-July I am so sick of lemons and don’t make anything with them until the following summer. I find you get a better flavour with fresh lemon juice than lemon extract but if that’s all you have then it will be fine.
