With the weather being still so hot here in Southern Alberta, 25 – 35 degrees C (77 – 95 degrees F), the last thing I want to do is turn on the oven. Cranberry Oatmeal Cookies
In our house raisins are incredibly divisive, Kevin loves them and I will substitute them for literally anything else. I have swapped them out for dried apricots, and dried cranberries I have even used coconut which is also not something I really enjoy either, but tough times call for time measures. What a crazy week this was! With the mall opening back up on Thursday this week was super busy and it seemed to fly by. Oatmeal Coconut Cookies
What a difference a day makes. |Yesterday it was snowing here and today it’s sunny and plus 10 degrees Celsius. I was feeling a little tropical with the warmer weather so I thought I would make something with coconut in it! Oatmeal raisin cookies if not made right are like little bricks, you almost chip a tooth on them. These ones are so soft and chewy that you will want to make more of them! This week was a rough week for baking. It seemed no matter what I made it either didn’t turn out or I burnt them in the oven. It was not good.
