    Oatmeal Raisin Cookies

    Oatmeal raisin cookies if not made right are like little bricks, you almost chip a tooth on them. These ones are so soft and chewy that you will want to make more of them! Typically I don’t really like raisins, I’m not sure why but I have never enjoyed them. These cookies though have changed my mind. I can sit and eat six of these cookies and not feel bad about it.     I don’t make hummingbird loaves or cakes very often, but every time I do I enjoy it! For some reason, I always think it can only be made for special occasions. Well, the special occasion is that the cold snap is over! Calgary had some pretty brutal temperatures (-35C), thankfully that has come to an end so I thought we should celebrate with a Hummingbird Loaf!     This recipe is one of Kevin’s favorites, he loves everything in it! He hates waiting for them to cool and sometimes starts to eat them out of the pan with a spoon.     This week I made some cinnamon rolls, which are delicious, but they took a very long time to make. The recipe called for quick rising yeast and all I had was regular yeast and so it took about 2 hours longer than it should have. I started making these at 10 AM and I wasn’t finished until 2 PM, so learn from my mistake and use fast-acting yeast, it will save you loads of time.
