Pistachio and Honey Scones for Blanket Weather

There’s a moment every fall when the blankets migrate. The throw that’s been folded up on a shelf all summer ends up back on the couch, then eventually onto the bed too, and suddenly you’re the kind of person who doesn’t get up from the couch without dragging one along. The evenings get a little shorter, the air gets a little sharper, and staying wrapped up in something soft stops feeling optional.

That’s the mood behind this bake. Pistachio and honey scones are the kind of thing you want within reach on a blanket-and-couch kind of afternoon — a little sweet, a little nutty, and warm enough to make sitting still for a while feel like the whole point. This week’s bake leans all the way into it: pistachio and honey scones, glazed with more honey, best eaten under a blanket with a hot drink close by.

These scones are everything a fall bake should be, a little sweet, a little nutty, and full of contrast in the best way. Cold butter cut into the dough gives you that shattering, flaky texture scones are supposed to have, chopped pistachios add crunch and a subtle richness, and the honey glaze on top ties the whole thing together with a warmth that plain icing sugar just doesn’t have. They come together fast, which is exactly the kind of low-effort, high-reward baking that fits into a busy fall weekend.

Why Honey Belongs in This Recipe

Honey does double duty here. In the dough, just a tablespoon rounds out the sugar with something deeper and more floral, so the scone itself isn’t just sweet; it’s actually flavorful. In the glaze, it replaces some of the usual flatness of a plain icing-sugar glaze with a little bit of that same warm, almost caramelized note. Paired with pistachios, which bring a slightly savory, toasted quality, you get a scone that reads as sweet at first bite but keeps revealing more the longer you sit with it, kind of like the season itself, really. It looks simple from a distance, but there’s a lot going on once you actually pay attention.

Honey Pistachio Scones

Prep Time 15 minutes
Cook Time 20 minutes

Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup chopped pistachios
  • 1/2 cup butter very cold cut into small cubes
  • 1 egg
  • 1/2 cup Greek yogurt or heavy cream  cold
  • 1/4 tsp vanilla extract
  • 1 tbsp honey

Glaze

  • 1/2 cup icing sugar
  • 1 tbsp milk
  • 1 tbsp honey
  • 1/4 cup Chopped pistachios for garnish

Instructions

  • Preheat the oven to 350 F
  • In a large bowl whisk together the flour, sugar, baking powder, and salt.
  • Add the pieces of cold butter and cut into the dough using a pastry cutter or a fork until the texture is a coarse meal. You want the butter to be small,(similar to making pie crust or cornmeal). Stir in chopped pistachios.
  • Lightly whisk together the yogurt or heavy cream, egg, vanilla extract, andhoney. Stir into the butter/flour mixture with a rubber spatula until combined.Do not over-mix.
  • Lay the dough out on a lightly floured work surface and lightly knead with a lightly floured hand about 4 times. Pat the dough out to an 8 or 9-inch circle, about 1 inch thick. I use a circle cookie cutter but you can also cut them into triangles.
  • Transfer the scones onto a parchment paper-lined baking sheet. Bake at 350F for 15-20 minutes until golden brown.

Glaze

  • While scones are cooling, make the glaze. Whisk together milk, icing sugar, and honey until smooth.
  • Drizzle on top of scones before serving. Sprinkle on chopped pistachios

How to Enjoy Them

These are made for the part of fall where the couch, a blanket, and something warm to drink are basically non-negotiable. Serve them slightly warm, with the glaze still a bit tacky, alongside a strong cup of coffee or a pot of tea. Bonus points if you don’t have to get up from under the blanket to reach one.
