Oatmeal Raisin Cookies

Oatmeal raisin cookies have a bit of a reputation—when done wrong, they’re dry, dense, and way too tough, the kind of cookie that makes you wonder if you should’ve just had a chocolate chip instead. But when done right? They’re soft, chewy, full of warm cinnamon spice, and absolutely irresistible.

I’ll be honest—I’ve never been the biggest fan of raisins. There’s just something about them that never quite won me over. But these cookies? They completely changed my mind. The raisins add just the right amount of sweetness and chewiness, perfectly complementing the hearty oats and buttery dough. I can (and do) eat half a dozen of these in one sitting, and I have no regrets.

INGREDIENTS

2 cups all-purpose flour

1 teaspoon baking soda

1teaspoon baking powder

1/4 teaspoon salt

1 cup butter

1 cup sugar

1 cup brown sugar firmly packed

2 large eggs

2 teaspoons vanilla

3 cups oats

1 1/2 cup raisins

DIRECTIONS

Preheat the oven to 325F. Line cookie sheets with parchment paper.

Whisk dry flour, baking soda, baking powder and salt together and set aside.

In a large bowl using a stand mixer beat together the butter and white sugar until completely smooth and creamy, about 3 minutes. Then add the brown sugar, once it is combined add the eggs one at a time and then the vanilla.

Slowly add the flour mixture into the butter and sugar mixture, until no flour is visible.

Add the oats and raisins, and stir to incorporate, over mixing will make the cookies hard so just mix until they are incorporated.

Scoop cookies on to cookie sheet and bake for 8-10 minutes until golden.

Remove from oven, let cool on cookie sheet for about 2 minutes before moving to a wire rack.
