The Only Banana Bread Recipe You’ll Ever Need
I’m not sure if it’s just me, but the bananas seem to be ripening faster than normal these days. I’m not sure if they are in transit longer than normal but it seems like within two days they are beyond ripe and I’m heading back to the grocery store to buy more bananas. Lemon Poppyseed Loaf
When I was on my lemon kick a couple of weeks ago I made this lemon poppyseed loaf. I always try to mix the sugar and lemon zest together to give it a more lemon flavour and this time it didn’t disappoint! If you’re not a fan of lemons you can use any citrus fruit and it would be amazing! This loaf is packed with lemon flavour and because of the yogurt, it is unbelievably moist. I go through phases where all I want to do is bake with lemons, well that time is now! It seems to always hit at the beginning of summer every year. I tend to make so many different lemon options (muffins, loaves, cupcakes) that by mid-July I am so sick of lemons and don’t make anything with them until the following summer. I find you get a better flavour with fresh lemon juice than lemon extract but if that’s all you have then it will be fine. There is something about them that brings me comfort, and with what is going on in the world right now we need all the comfort that we can get. This loaf has just the right amount of spice to it, and topped with cream cheese icing it is everything that you will need right now.
